This is my absolute favourite way to start the day!! Any overnight Chia Seed pudding will leave you feeling full, whilst providing you with lots of goodness, but this combo is the yummiest I’ve tried so far. Plus with the antioxidants from the chia seeds and extra from the blueberries, it will give your skin that extra boost it needs too!
Chia seeds are a little dream! They don’t taste of much, but what they lack in flavour, they more than make up for in their health benefits. With more omega-3 fatty acids than salmon, a wealth of antioxidants and minerals, they provide a complete source of protein – as well as having even more fibre than flax seed. These are what they look like before added to the pudding (sorry the pic isn’t in the best focus, but it’s early and I’m probably still half asleep!)
You can pick them up in Sainsburys when doing your weekly shop, but they are quite expensive there, so I would suggest making your way to your local natural food shop or even ordering from Amazon. The packet will last you a long time as you don’t use a large quantity at a time….as you can see from recipe below!!
Because you make this before going to bed, it also means that it’s ready to grab from the fridge and go in the morning…saving precious time in the pre work routine! It’s made with the following ingredients:
2 tablespoons Chia Seeds
1/2 Cup Almond Milk (Unsweetened)
1 tablespoon Desiccated Coconut
A swirl of Pure Maple Syrup
A handful of Blueberries and Flaked Almonds to top
To make it you just add the chia seeds to a bowl, followed by the almond milk. Give it a quick stir before adding the coconut and maple syrup then stir again. Leave it to sit for a few minutes, give it another stir (you will notice the texture changing already as the seeds start to expand and it will take on a more jelly like consistency!) and then cover and leave in the fridge over night.
In the morning, give it another little stir and add the flaked almonds and blueberries then enjoy!!
As I mentioned, because this breakfast is high in antioxidants it will do wonders for your skin and will also help beat off any mid morning cravings! There are lots of combinations that you can try out, but this is the one I’ve stuck to longest!!
